Chocolate in recipes tastes far richer with coffee added to it. We often see recipes calling for strong coffee or instant coffee. No instant coffee in my house. Yes, we had it in the past, but because of the humidity it quickly was just a fused lump in a jar, when you finally had a need for it, you had to chuck it in the trash. We drink a lot of Costa Rican coffee, dark roast is our preference and most days I drink roughly nine cups. We make our coffee to order as it tastes best fresh brewed and so I don't have triple strength leftover coffee sitting around at room temperature waiting on a recipe. Everything has a fix. Roasted coffee beans, dipped in chocolate are a hot item for tourists and super tasty. I thought why not put fresh coffee grinds into the recipe for brownies, cakes, cookies? And so, Ground coffee, my new culinary adventure came to life. I don’t measure, not Martha Stewart, not exact. Eyeballing it or count glugs is my thing, I am a counter. However, I do measure coffee with the dedicated coffee scoop in the container. I thought, just add 6 scoops to the brownies for added fiber, no extra calories and get big coffee flavor without brewing it up… a short-cut. Did I mention I am also a lazy inventive cook who likes to leave out as many time consuming and mess making steps as possible? After all, I have to clean up my own mess unlike those television cooks, there is no dishwasher here.
So, I think I am on to something here. Turns out that coffee grinds have more nutrients than drinking coffee. The mucus membranes in our mouths quickly absorb those nutrients and the beans give us all of the nutrients, not just what drips through the filter.
